Strawberry Banana Cupcakes 🍓🍌 Soft, Sweet & Perfec

This is one of my favorite spring desserts because it’s light, fruity, and not too heavy. The banana cupcake is super soft and moist, and the strawberry buttercream adds that fresh, sweet flavor that just screams spring. Topped with a little crunch from the wafer and a drizzle for extra flavor, this is definitely one of those desserts you can make for anything and everybody will love it.

Ingredients:

• 1 box vanilla or yellow cake mix

• 3 eggs

• 1/2 cup oil

• 1 cup mashed ripe bananas

• 1/2 cup milk

Strawberry Buttercream:

• 1 cup unsalted butter (softened)

• 3–4 cups powdered sugar

• 1/4 cup strawberry puree or strawberry syrup

• 1 tsp vanilla extract

Toppings:

• Wafer cookies

• Strawberry drizzle or syrup

• Crumble topping (optional)

Instructions:

1. Preheat oven to 350°F and line cupcake pan.

2. Mix cake mix, eggs, oil, mashed bananas, and milk until smooth.

3. Pour into liners and bake for 18–22 minutes or until done.

4. Let cupcakes cool completely.

5. Beat butter until smooth, then add powdered sugar, strawberry puree, and vanilla to make frosting.

6. Pipe frosting onto cupcakes.

7. Top with wafers, drizzle, and crumble.
