Cornflake Candy

Cornflake Candy

Ingredients:

• 3 cups plain Cornflakes (not sugar-frosted)

• ½ cup light corn syrup

• ½ cup granulated sugar

• ½ cup creamy peanut butter (not natural)

• 1 teaspoon vanilla extract

Instructions:

1. Prep the baking sheet:

Line a baking sheet with parchment paper or a silicone baking mat.

2. Heat the mixture:

In a medium saucepan over medium heat, combine the corn syrup, sugar, peanut butter, and vanilla extract. Stir constantly until smooth and the sugar is fully dissolved.

3. Mix with cornflakes:

Remove from heat. Immediately add the cornflakes and gently stir until evenly coated.

4. Scoop onto baking sheet:

Using a cookie scoop or tablespoon, drop spoonfuls of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.

5. Let set:

Allow candies to cool and harden at room temperature for about 30 minutes.

6. Serve and enjoy!

Notes:

• Use regular creamy peanut butter (not the natural kind) for the best texture.

• Work quickly when adding cornflakes—the mixture hardens fast!

• Optional mix-ins: mini chocolate chips, chopped nuts, or flavored extracts.

• Add a drop of gel food coloring for a festive look.

• Constant stirring while heating prevents lumps.

• A cookie scoop helps keep portions even.
