The Healthiest Holiday Cookie (that actually tastes good)
These cookies are a take on the traditional Argentinian Alfajor and they are perfect for your holiday party!
GF, GRAIN FREE, VEGAN, DF, REFINED SUGAR FREE
Ingredients:
Cookie Dough:
* 4 Tbsp coconut oil, melted
* 4 Tbsp maple syrup
* 1 tsp vanilla extract
* 1 tsp cinnamon
* Pinch of salt
* 1 1/4 cups almond flour
* 3/4 cup tapioca starch

Vegan Sugar-Free Dulce de Leche Filling:
* 1 1/2 cups pitted dates
* 1 1/4 cups liquid allulose sweetener
* 1/4 cup coconut butter
* 1/4 cup cashew butter
* 1/2 Tbsp vanilla extract
* 1 Tbsp lemon juice
* 1/4 cup warm water
* 2 Tbsp cocoa powder
* 1 tsp molasses
* 1/4 tsp salt

Optional for coating:
* Unsweetened coconut flakes
Instructions:
Make the Cookies:
1. Preheat your oven to 350°F.
2. In a bowl, whisk together the coconut oil, maple syrup, vanilla, cinnamon, and salt.
3. Add the almond flour and tapioca starch, mixing until a soft dough forms.
4. Roll the dough between two pieces of parchment paper to about â…›-inch thick.
5. Use a round cutter to cut circles from the dough.
6. Place the cut cookies on a baking sheet and freeze for 10–15 minutes. This helps them hold their shape.
