Sweet potato nachos. Medallion your sweet potatoes put it in a mixing bowl put whatever seasonings you like with olive oil, toss put them on a tray with parchment sheet. Put your oven at 400° for 20 minutes then top whatever toppings you want. I used white rice, onion, shredded up chicken thighs and cheese and then pop back in the oven for an additional five minutes.
