When the weather is warm, I love making simple desserts that don't need the oven. This one is creamy, fruity, refreshing, and tastes like summer in every bite. 💓

• 1 sachet Angel Delight Strawberry

• 250g Mascarpone

• 1 tub Elmlea Double Cream

• 1 pack Strawberry Jelly Crystals

• 1 pack Trifle Sponges

• Fresh Strawberries

• Milk

🌿 How I made it:

1. Prepare the strawberry jelly according to the packet instructions and pour it into a cake tin or serving dish.

2. Add sliced fresh strawberries and leave in the fridge until set.

3. Arrange the trifle sponges on top of the jelly layer.

4. Whisk the Angel Delight with milk until thick.

5. Mix in the mascarpone until smooth.

6. Whip the Elmlea Double Cream and gently fold it into the mixture.

7. Spread over the sponge layer and smooth the top.

8. Chill for at least 4 hours, or overnight.

9. Decorate with fresh strawberries before serving.
