Hey everyone and welcome to another episode of Junk Food Rehab in today’s episode I made a Vegan orange chicken and rice stir fry using some @Daring Plant Chicken as well as some Jasmin rice I also used some stir fry veggies and an orange chicken sauce and I air fried the plant based chicken along with a can of chic peas seasoned with some chili lime seasoning and I added a can of water chestnuts for a little extra crunch. I really hope you enjoy this week’s episode!!!
If you're exploring plant-based options that don't sacrifice flavor or texture, this vegan orange chicken stir fry is a fantastic choice. Using @Daring Plant Chicken provides a satisfying, crispy bite when air-fried, mimicking the experience of traditional chicken but fully plant-based and nutritious. Incorporating jasmine rice offers a fragrant, slightly sticky base that complements the stir-fry's vibrant sauce. Adding a can of chickpeas seasoned with chili lime seasoning not only ups the protein content but also introduces a mild kick that pairs beautifully with the sweet, tangy orange chicken sauce. Water chestnuts bring an enjoyable crunch, balancing the soft textures and making each bite interesting. Stir-fry vegetables add freshness and color, making the dish visually appealing as well. In my experience, air frying the plant-based chicken and chickpeas together ensures even cooking and a perfect crispiness without extra oil, which makes the dish lighter and healthier. This method also saves time and effort. For those new to plant-based cooking or looking to reduce meat consumption, this recipe serves as a great introduction that’s both approachable and full of familiar flavors. Feel free to customize the vegetable mix based on what's seasonal or available, and adjust the chili lime seasoning to fit your heat preference. This recipe also reheats well, making it ideal for meal prep or quick weeknight dinners. Overall, this vegan orange chicken stir fry offers a delicious, nutritious alternative to traditional junk food, aligning well with a balanced, plant-forward lifestyle.
