🥞 we study in the summer of the third year. Everyone will have about 2 months. We only study this subject. In one week, we will study 2 days. In one day, we will study 2 periods. เผื่อใครกำลังหา “วิชาเสรี ม.กรุงเทพ / วิชาเสรี BU” แล้วเล็ง HM255 Basic Patisserie อยู่ เราขอเติมรายละเอียดที่ตอนตัดสินใจลงเรียนแล้วช่วยมากๆ แบบเล่าจากมุมเด็กที่เรียนจริงนะ 1) วิชานี้เหมาะกับใคร / ไม่เหมาะกับใคร - เหมาะกับคนอยากได้สกิลติดตัว ทำขนมพื้นฐานได้จริง ๆ ตั้งแต่การชั่งตวง วอร์มเตา ตีวิปครีม ทำซอส/ไส้ ไปจนถึงการประกอบงานให้สวย - เหมาะกับคนชอบลงมือทำและพร้อมลุยงานครัว เพราะช่วงบ่ายจะค่อนข้าง “แข่งกับเวลา” และต้องยืนทำค่อนข้างนาน - ถ้าไม่ถนัดความหวาน/กลัวน้ำหนักขึ้น แนะนำเตรียมหาคนช่วยกินหรือแบ่งให้เพื่อน เพราะทำเสร็จแล้วเอากลับบ้านได้ บางเมนูหวานสะใจมาก 2) บรรยากาศการเรียน (ทฤษฎี + ปฏิบัติ) โดยมากคาบเช้าจะเป็นเดโม อาจารย์ทำให้ดู เราจดสูตร จดขั้นตอน และดูเทคนิคสำคัญ เช่น การตีส่วนผสมให้ขึ้นฟู จุดที่ห้ามคนแรง การอบให้ได้สี ฯลฯ แล้วคาบบ่ายถึงลงมือทำจริงเป็นทีม/เป็นสถานีในครัว เครื่องมือค่อนข้างพร้อม มีโต๊ะสเตนเลส อ่างล้าง และเครื่องผสมอาหารหลายเครื่อง ทำให้ได้ฟีลครัวจริงมาก 3) เรื่องชุดเชฟ/กฎระเบียบที่ควรรู้ก่อนลง วิชานี้จะซีเรียสเรื่องความสะอาด เช่น ตรวจเล็บ ความเรียบร้อยของชุดเชฟ หมวก รองเท้า ก่อนเข้าครัว แนะนำให้เตรียมของให้ครบตั้งแต่วันแรก และเผื่อเวลาแต่งตัว เพราะถ้ามาสายจะกดดันทั้งกลุ่ม 4) ควรเตรียมอะไรไปเองให้เรียนง่ายขึ้น - กล่องใส่ขนม/ถุงหิ้ว: บางวันได้สโคน คุกกี้ ชูครีม เค้กชิ้นเล็ก ๆ หรือทาร์ตกลับบ้าน กล่องช่วยให้ไม่เละระหว่างทาง - สมุดจดหรือ iPad: ตอนเดโมมีรายละเอียดเยอะ จดสูตร+ทิปเล็ก ๆ เช่น อุณหภูมิที่เหมาะ การพักแป้ง การทำเลมอนโลฟ/ครีม/ซอสให้ไม่แยกตัว จะช่วยมากตอนสอบปฏิบัติ - ผ้ากันเปื้อน/ทิชชู่/ที่คีบเล็ก ๆ (ถ้าอาจารย์อนุญาต): ทำงานไวขึ้นและดูมืออาชีพ 5) แนวทางอ่านสอบ/เตรียมสอบกลุ่ม จากที่เจอ สอบจะมีทั้งแบบดูวัตถุดิบ (แยกแป้ง น้ำตาล หรือส่วนผสมต่าง ๆ) กับสอบทำขนมเป็นกลุ่มให้เข้าธีมเดียวกัน แนะนำให้ซ้อม “แบ่งงาน” ตั้งแต่ก่อนวันสอบ เช่น คนหนึ่งดูการอบ คนหนึ่งทำครีม/ไส้ คนหนึ่งประกอบและตกแต่ง และทำเช็กลิสต์อุปกรณ์ล่วงหน้า จะลดความพลาดหน้างานมาก 6) เมนูที่ได้ทำ (ไอเดียจากที่เราเจอ/เห็นในคลาส) ในคลาสจะมีหลายแนวตั้งแต่สโคน คุกกี้ช็อกชิพ บราวนี่ เค้กช็อกโกแลต โรลเค้กผลไม้ พานาคอตต้าบลูเบอร์รี เลมอนโลฟ ทาร์ตพีช ไปจนถึงชูครีม/พัฟ เรียกว่าได้ลองทั้งงานอบและงานครีม ทำให้รู้ว่าตัวเองถนัดสไตล์ไหน ถ้าใครกำลังเลือกวิชาเสรี ม.กรุงเทพ ปี 68 แล้วอยากได้วิชาที่ “เรียนแล้วได้ของกลับบ้าน+ได้สกิลจริง” HM255 เป็นตัวเลือกที่คุ้มมาก แต่ต้องเตรียมแรงกายและเวลาหน่อยนะ
