Fry it, shrimp. The menu kids like.
Ingredients
400 grams of white shrimp meat
It's 100 grams of pork.
1 tablespoon fragrant mushroom white soy sauce
1 tablespoon oyster sauce
1 teaspoon sugar
2 teaspoons sesame oil
½ teaspoon ground pepper
1 tablespoon corn flour
10 grams of fine alley coriander stalks
10 grams of fine alley spring onion stalks
2 chicken eggs
70 grams of bread crumbs
140 grams of crispy fried dough
Salad vegetables, plum dipping sauce
How to do
1. Take the white shrimp meat and wash it thoroughly. Liner the water completely dry (very important to make the meat sticky). Then slap it with a banged knife and chop it coarsely enough. Or spun enough to still see the shrimp meat in pieces.
2. Chop the pork oily thoroughly (pork oily will help to fry it juicy, not dry hard)
3. Prepare a mixing bath using 2 mixing baths. One with ice, the other placed over ice to cool. Bring shrimp meat and pork oil in a mixing bowl. Add soy sauce, oyster sauce, granulated sugar, sesame oil, ground pepper and corn starch.
4. Massage all the ingredients together. Then add the coriander stalks and alley onion stalks. Continue the massage until the meat becomes sticky. Then hold the shrimp lump "thrash" into a bowl of strong mixing about 10-15 times to make the shrimp meat bounce. Soak the mixture in the fridge for 15-30 minutes to make the set and mold easier.
5.Split cup for crispy fried dough, chicken eggs (whisk to crack), and bread crumbs
6. Bring shrimp meat and mold it into a round or flat cube as you like. Mix the crispy fried dough (thin). Then moisten the chicken egg and mix the bread crumbs all over.
7. Set the centerfire pan to heat the oil (test by sprinkling the breadcrumbs into it and immediately fluffing) and bring down the fire, bring the shrimp down, fry until cooked yellowish gold on both sides, scoop up, rest the oil, ready to serve with plum dipping sauce.
