私がこの「小松菜×ちりめんじゃこふりかけ」をよく作るのは、“子供が食べてくれる青菜”が欲しい時。青菜ってそのままだと残されがちだけど、ふりかけにすると不思議と食いつきが良くて、うちも白ごはんが一瞬で消えます。小松菜の鉄分・カルシウム、じゃこのカルシウムが一緒に摂れるので、忙しい日の栄養フォローにも助かってます。 【よりおいしく作るコツ（人気レシピっぽく仕上がる）】 ・小松菜の水気はしっかり：洗った後の水が残るとベチャッとなりやすいので、切る前にキッチンペーパーで軽く拭くと炒めやすいです。 ・ごま油は最初に入れて香り出し：小松菜を入れた瞬間に香りが立って、子供も「いい匂い〜」って寄ってきます。 ・“煮絡め”は焦らない：調味料（みりん・砂糖・ニラ麹）を入れたら弱めの中火で、汁気が少し残るくらいまで絡めるとしっとり。逆にカリカリ寄りが好きなら、汁気が飛ぶまで炒めてOKです。 【子供向けにする時の調整】 ・塩気が気になる時は、ちりめんじゃこを熱湯をさっとかけて塩抜き（時間がない日は省略でも）。 ・辛みが苦手な子がいるなら、ニラ麹は少なめから。まず小さじ1〜で作って、あとから足すと失敗しにくいです。 【青菜ふりかけのアレンジ（ご飯以外も便利）】 ・豆腐にのせて、醤油を数滴で即席おつまみ ・卵焼きの具に混ぜる（彩りも栄養もUP） ・パスタに和えて“和風オイルパスタ”っぽく（じゃこの旨みが強いので味付け少なめでOK） 【保存の目安】 作り置きするなら、粗熱を取ってから清潔な保存容器へ。冷蔵で2〜3日を目安に食べ切るようにしています。時間がある日は多めに作って、小分け冷凍→食べる分だけ解凍すると、朝のごはん作りがかなりラクになります。 市販のふりかけももちろん便利だけど、これは“手作りなのにパパッと作れる”のが良いところ。小松菜とちりめんじゃこが家にある日にぜひ試してみてください。
