✨Chewy Sprinkle Sugar Cookies✨
If you’re looking for the perfect chewy sprinkle sugar cookie, this is the recipe you’ll come back to again and again. These cookies are soft in the center, lightly crisp on the edges, and rolled in sugar for that classic bakery-style finish.
INGREDIENTS
1 cup salted butter (2 sticks) (softened at room temperature)
1 ¼ cup sugar (plus an extra 1/2 cup for rolling)
1 egg (room temperature)
1 tbsp vanilla extract
2 ½ cups all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp cornstarch
1/4 tsp salt
1 cup of sprinkles
INSTRUCTIONS
Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
In a stand mixer fitted with the paddle attachment, beat the softened butter and 1 ¼ cups sugar on medium-high speed until light and fluffy, about 2 minutes. The mixture should look pale and airy.
Scrape down the sides of the bowl. Add the egg and vanilla extract and mix until fully combined.
Next add the flour, baking soda, baking powder, cornstarch, and salt to the stand mixer and mix on low speed until just combined. The dough should be soft and thick, not sticky or dry.
Gently mix in the sprinkles until evenly distributed.
Scoop the dough using a medium cookie scoop or about 2 tablespoons per cookie. Roll each dough ball in the remaining ½ cup granulated sugar.
Place cookies 2 inches apart on the prepared baking sheets.
Bake for 12–14 minutes, until the cookies have puffed up and the edges are set and lightly crinkled, while the centers remain soft and gooey. If you make and chill the dough ahead of time, simply add 1-2 minutes of baking time.
Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
