Bruschetta Gnocci

My favorite weeknight meal!!

Literally 20 minutes and sooooooo delicious

-dice up 2/3 bell peppers (yellow, red and orange)

-mix in a bowl with olive oil, salt, pepper, red pepper flakes

-pour on a baking sheet and bake at 400° for 15 min

-after 15 min, add fresh gnocchi (the kind that’s refrigerated at the grocery store) and drizzle more olive oil

-bake for another 10 min

-remove from oven and add fresh basil, balsamic glaze and burrata cheese

-ENJOY!!!
