How I Make Authentic Italian Bruschetta at Home

🍅 Back From Italy & Still Craving Bruschetta 😋

Ever since I got home from Italy, I can’t stop craving fresh, homemade bruschetta, so I finally started making it myself! It’s bright, garlicky, and perfect on crunchy crostini. Here’s how I do it ⬇️

🌿 Ingredients

Tomato Topping

3–4 cups finely chopped ripe Roma tomatoes (7–8 tomatoes)

½ cup minced fresh basil (mine’s straight from the garden 🌱)

⅓ cup minced red onion (optional — many spots in Italy skip this!)

3 garlic cloves, minced

⅓ cup olive oil

1 tbsp red wine vinegar

1 tbs Italian seasoning

2 tsp garlic salt (I do a little extra I love garlic personally)

1 tsp salt

1 tsp ground pepper

Balsamic glaze for drizzling (or you can mix it in as well)

Crostini

1 baguette, sliced 1″ thick

1 garlic clove, halved

Olive oil

I also sprinkle a bit of rosemary on the baguettes too!

🥖 Method

Combine tomatoes, basil, onion, garlic, oil, vinegar, salt & pepper in a bowl. Taste and adjust with garlic salt (I love extra!).

Arrange baguette slices on a baking sheet, brush with olive oil, and toast at 400°F for 10 minutes until lightly golden. Rub each with the cut side of garlic.

Spoon tomato mixture over crostini and drizzle with balsamic glaze. (You can also add balsamic glaze into the mix for an extra touch of flavor) 😋

💡 Make ahead: Keep the tomato mixture in the fridge until ready to serve.

✨ Tip: If you can’t find Roma tomatoes, tomatoes on the vine work great too!

Save & try this recipe next time you want a little taste of Italy at home! 🇮🇹❤️

***Note: In the photos I’m using a garlic & rosemary infused “bruschetta” olive oil I picked up in Italy 😊 — but you can use any olive oil you love!

... Read moreIf you're aiming to replicate the authentic flavors of Italian bruschetta, a few extra tips can elevate your preparation beyond the basic recipe. First, consider the quality of ingredients, as traditional bruschetta is all about highlighting fresh produce and simple seasoning. Using ripe Roma tomatoes or tomatoes on the vine ensures a perfect balance of sweetness and acidity. Fresh herbs like basil from the garden add an aromatic freshness that dried herbs can't match. Your choice of olive oil plays a crucial role; if you can find garlic and rosemary infused olive oil similar to the one mentioned, it adds depth and an herbal complexity, but a high-quality extra virgin olive oil works excellently. Red wine vinegar should be aged and smooth—Denigris Balsamic Vinegar Aged of Modena, a popular choice in Italy, is noted for its rich yet balanced flavor and enhances the tomato topping beautifully. When preparing the crostini, toasting the baguette slices at 400°F for about 10 minutes until golden achieves that perfect crunch. After toasting, rubbing each slice with a freshly cut garlic clove infuses subtle but noticeable garlic aroma. Some cooks also sprinkle fresh rosemary on the baguettes before toasting to add another herbal layer. For serving, keep the tomato topping chilled until ready to use, as allowing it to marinate slightly in the fridge helps the flavors meld together. Drizzling balsamic glaze over the assembled bruschetta or mixing a bit into the tomato topping offers a sweet and tangy twist—just be careful not to overpower the fresh ingredients. Lastly, bruschetta is a versatile dish that can be adapted to your taste: omit red onions if you prefer a more traditional version found in many Italian regions, or add a pinch of garlic salt for an extra savory kick. This easy-to-make appetizer delivers a true taste of Italy and is perfect for sharing with friends and family at any occasion.
