Spicy Cajun Fried Chicken with Creamy Garlic Gravy
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 cup all-purpose flour
- 2 tablespoons Cajun seasoning
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Vegetable oil for frying
For the Creamy Garlic Gravy:
- 2 tablespoons butter
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 cup chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
Instructions:
1. In a large bowl, combine the buttermilk, Cajun seasoning, paprika, garlic powder, onion powder, salt, and pepper. Add the chicken breasts and marinate for at least 30 minutes.
2. In a shallow dish, mix together the flour, Cajun seasoning, paprika, garlic powder, onion powder, salt, and pepper. Dredge the marinated chicken breasts in the flour mixture, making sure they are evenly coated.
3. Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken breasts for about 6-8 minutes per side, or until golden brown and cooked through. Remove from the skillet and let them rest on a paper towel-lined plate.
4. In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
5. Stir in the flour and cook for another minute, then gradually whisk in the chicken broth and heavy cream. Bring the mixture to a simmer, stirring constantly until the gravy thickens.
6. Season with salt and pepper to taste.
