The other day, I visited Kawagoe with an acquaintance and was looking for a late lunch. There were no people waiting in front of the famous restaurant "Bakusha Honten" that I wanted to visit once before. I was blessed with a rare chance that the stool for the line was standing in my hand for a long time, and I rushed in without hesitation!
Emotional appearance like a petit restaurant. The inside of the store is also a calm Japanese taste, it is a beautiful and comfortable space. There are only 12 seats at the counter, but it is managed by 4 staff members, and I feel the style of a super popular restaurant.
The order is "Tsukemen" of the royal road.
Glossy homemade thick noodles carefully tightened with water have a refreshing texture that combines "chewy feeling like Sanuki udon" and "core and strength like al dente."
And the soup that catches this thick noodle.
Animal-based (chicken bones, pork bones) and seafood-based (bonito, dried sardines) double soup simmered for more than 10 hours, the biggest feature "fish meal" is effective. Rich but not persistent, excellent balance of sweetness and umami. The clear flavor that spreads in the mouth is the royal road itself.
There are two types of char siu, a strip of sirloin with condensed umami and toro toro ribs. It was a perfection that made me think that "char siu tsukemen" is also possible. (The seventh picture is char siu men ordered by an acquaintance. This is also an elegant and beautiful arrangement!)
Finally, finish with soup split. Even though I knew it was a salt yellow card, I ate it all 😋
Currently, there are many shops that inspire "Seafood Tonkotsu + Fish Meal," and in a sense it may have become "a taste that can be eaten anywhere." However, that's why I realized that there is a great sense of bliss and meaning to taste tradition and standard taste at the Sohonzan, which is the pioneer.
The title of 100 famous stores for 6 consecutive years is not Date. It was a happy time to casually enjoy Saitama's leading famous store. It was a treat!

私も以前、川越を訪れた際に「頑者本店」に立ち寄った経験があります。行列を覚悟していたのですが、たまたま空いている時間帯に巡り合い、すぐに入店できたのがラッキーでした。実際に味わったつけ麺は、ホームメイド感溢れる自家製太麺が特徴的で、舌触りが滑らかかつモチモチとした食感が記憶に残っています。麺の芯にしっかりとしたコシがあるため、つけ汁との絡みも抜群でした。 スープは動物系の旨味と魚介の香りがしっかりと調和していて、特に魚粉の風味がとても効いていました。濃厚ながらしつこさを感じさせない味付けは、一口ごとにさらなる食欲をそそる仕上がりです。チャーシューもロースとバラ肉の2種類が乗せられ、それぞれ異なる食感と味わいが楽しめました。私は特にバラ肉のトロトロ感に感動しました。 また、店内の落ち着いた和の雰囲気は、まるで上質な料亭のようで、食事中も非常にリラックスできる環境でした。カウンター12席という限られた席数ながら、スタッフの方々のサービスもきびきびしており、待ち時間も気になりませんでした。 つけ麺の最後には、スープ割りでまろやかさをプラスできるのも嬉しいポイント。食べ終わった後の満足感は、この店ならではのものです。魚介豚骨＋魚粉のつけ麺店は今や多くありますが、やはりオリジナルの味を守り続けている「頑者本店」で味わう価値は大きいと感じました。川越グルメとしても人気が高まっていますので、訪れた際はぜひ一度、伝統の味を楽しんでみてください。
