30 Minute Fajita Bake

I have literally never posted on here but I just made this tonight and it was so good I had to share it somewhere. I originally saw this recipe on Pinterest, but modified it here and there.

I’d say this makes roughly 4-5 servings in only 30 minutes, so it’s great for meal prep (which is why I made it to begin with). Let me know how it tastes!

Here's what you'll need to create this savory dish: 12oz of shredded chicken breast, 1 large onion sliced into strips, and 2 bell peppers of your choice (red and yellow recommended) for that vibrant color and taste. Don't forget a packet of fajita seasoning mix, an 8oz package of cream cheese, and 8oz of shredded cheese—Mexican blend works best! Begin by preheating your oven to 350°F. Heat a drizzle of olive oil in a large pan over medium heat and add your sliced onions and bell peppers. Sauté until soft. Meanwhile, melt the cream cheese in a separate bowl, mixing in the fajita seasoning for added flavor. Once the vegetables are cooked, add the shredded chicken to the pan and pour in the melted cream cheese mixture, stirring until well combined. Transfer the mixture to a greased 9x9 non-stick baking dish, spreading it evenly across the base. Top with a generous layer of shredded cheese. Bake in the oven for about 20 minutes, or until the cheese is melted and bubbly. This dish serves approximately 4-5, making it perfect for meal prepping. Pair it with tortillas or serve it over rice for a complete meal. Enjoy your flavorful and satisfying dinner!
