I've learned in my 8 years as a mom and 10 plus working with kids that new foods are scary. Many children refuse new food because they are unfamiliar, the texture makes them uncomfortable or a variety of reasons. An encouraging way to expose children to new foods is by identifying them. Asking questions like what color is it, let's touch it what does it feel like, give it a sniff, a link, a nibble... okay how about a bite but you don't have to swallow. When cooking a meal your child may refuse try getting them to participate in the meal prep so that can identify everything that goes into the meal. This will encourage them to try it since they know what is in it. Exposure also is great, try adding the foods they won't try on the side of meals this will make them more comfortable with it.
