5 College Struggle Meals I Ate As a Student

Sometimes I didn’t have ingredients to cook, money to grocery shop, or time to make an intricate meal. Here’s a couple of meals I made during college, as well as some tips on getting food during school.

SLIDE 2:

Microwave Mac & cheese. If you can, add Greek yogurt, chopped up hot dogs, or chicken for protein.

If you’re into Buffalo Mac, a little Buffalo sauce and some chicken can make cheap Mac n cheese taste better!

Veggie quesadillas. If you can, Add black beans or chicken.

SLIDE 4:

Ramen with fresh veggies & rotisserie chicken. Find a meal prep recipe on my page that uses a cheap ramen packet and fresh carrots.

Eggs are quick to cook and can be prepared in multiple ways. I ate these EVERY day.

Spaghetti with sauce. Only requires 2 ingredients but you can always add more if you have extras on hand.

I've been there, staring at an empty cupboard, wondering how to make something satisfying. Luckily, I've discovered some fantastic ways to turn basic ingredients into delicious, cheap, and often high-protein meals that really hit the spot. Let's talk about some of those pantry staples that can become your culinary superheroes. My go-to was always boosting my Kraft Easy Mac! Don't just eat it plain. I'd raid the fridge for whatever protein was available – leftover chicken, sliced hot dogs, or even a spoonful of Greek yogurt for creaminess and extra protein. A dash of hot sauce (those little packets from takeout are gold!) or some chili flakes can really elevate it from a simple side to a hearty meal. And if you’re a fan of Buffalo Mac, a little Buffalo sauce with some pre-cooked chicken can make that cheap mac n cheese taste incredible. Veggie quesadillas were another lifesaver. You can make them super hearty with canned black beans, corn, or even leftover rice. If you have some shredded cheese and maybe a few bell peppers or onions that need using up, you're set. I loved adding a bit of Taco Bell Chipotle Sauce for an extra kick – it makes even the simplest quesadilla feel gourmet! If you're feeling adventurous, some jalapeños can really spice things up. Ramen is the ultimate college staple, but it doesn't have to be just broth and noodles. I learned to transform it into a proper meal. If you have a rotisserie chicken, shred some in. Add fresh spinach, a soft-boiled egg (so easy to make!), or even some frozen mixed veggies like carrots and peas. I'd sometimes prep a 'mason jar ramen' by layering my ingredients – noodles, veggies, protein, and seasoning – so all I needed to do was add hot water for a quick, hot lunch. Eggs truly are a student's best friend. They're cheap, versatile, and packed with protein. Beyond scrambled or fried, try making a quick omelette with whatever veggies are wilting in your fridge. 'Eggy rice' is another fantastic way to use leftover rice – just stir-fry it with an egg or two and a splash of soy sauce. A carton of eggs lasts ages and is so useful for breakfast, lunch, or dinner. And then there’s spaghetti. Spaghetti with Bertolli Vodka Sauce is incredibly simple. While a jar of sauce is delicious on its own, you can easily bulk it up. Add some canned diced tomatoes, frozen meatballs, or even a handful of frozen spinach for extra nutrition. It feels like a proper home-cooked meal with minimal effort. Beyond making these meals, remember to leverage campus resources. Attend events for free food – those 'tacos with rice and beans' or 'French toast' opportunities are often delicious! Check if your university has a food pantry or if you qualify for food assistance programs. And yes, saving those little hot sauce packets, napkins, and plastic cutlery from takeout really does add up! It might seem small, but every bit helps when you're on a tight budget. Happy eating!
