Coconut Miso Stew Recipe 🍋‍🟩

Would this be perfect for fall? Yes. But it’s also perfect for summer (thanks to the coconut and lime flavor 🥥). This is one of my FAVORITE meals I’ve ever made. The miso makes this dish next level.

Ingredients:

• Rice

• Chicken

• Coconut milk (I used sweetened)

• Lime juice

• Soy sauce

• Kale

• White onion

• White miso paste

• Seasonings (paprika, chili powder, salt, pepper, garlic, red chili flakes)

• (Optional) siracha or chili oil

Directions:

1. Cook white rice.

2. Boil about 2 fistfuls of kale until soft.

3. Season chicken and cook until fully cooked. Shred and set aside.

4. Cook minced onion and garlic until fragrant. Then add a generous amount of coconut milk (I probably used about 2-3 cups). If your coconut milk is unsweetened, add a little bit of white sugar. Stir.

5. Bring coconut milk to a simmer, then lower the heat slightly. It can bubble slightly, but it shouldn’t be boiling. Add a lot of lime juice and a sprinkle of soy sauce. Then add pepper and chili powder.

6. Add a generous amount of miso and mix and mash until it’s incorporated. It’s important to add miso last, as the healthy probiotics in it can die if they are too hot.

7. Add the chicken last, mix well. Let it sit for 2 minutes, then serve over rice and kale. Enjoy with siracha or chili oil!

One of the secrets to getting that incredible depth of flavor in this stew starts right at the beginning: sautéing your aromatics. When you're cooking those chopped white onions and minced garlic in your stainless steel pan, don't rush it! Taking the time to let the white onion cooking pan translucent stage happen naturally is crucial. It softens their sharpness and brings out a subtle sweetness that forms the foundation of your creamy, light-colored liquid broth. I used to just toss everything in, but I learned that this small step makes a huge difference in the overall richness of the coconut miso broth. Speaking of broth, the combination of coconut milk, lime juice, soy sauce, pepper, and chili powder creates such a harmonious base. I've experimented with different types of coconut milk – full-fat for extra creaminess, or light for a healthier option. Both work wonderfully, but the full-fat really gives it that restaurant-quality mouthfeel. And the lime juice? It’s not just for garnish; it brightens up the whole dish, cutting through the richness of the coconut milk and balancing the savory white miso paste. When it comes to the white miso paste, remember the golden rule: add it last and don't boil it aggressively! I learned this the hard way once, and the flavor just wasn't as vibrant. Miso contains beneficial probiotics, and high heat can diminish their goodness and alter the delicate umami flavor. So, gently stir it in off the heat or at a very low simmer, making sure it dissolves completely. This ensures you get all that wonderful, complex umami miso chicken stew flavor. For the chicken, I always go for shredded chicken because it absorbs the flavors of the stew so beautifully. I found that cooking seasoned chicken breasts separately until just done, then shredding them, keeps them tender and juicy without overcooking in the stew itself. Sometimes, if I'm feeling extra, I'll even quick-sear the shredded chicken slightly after shredding to get a little texture. This coconut miso chicken stew is incredibly versatile. While serving it over white rice and green kale is my absolute favorite, you can also try it with quinoa, noodles, or even just a crusty piece of bread to soak up that amazing coconut miso broth. For an extra kick, a drizzle of sriracha or chili oil at the end truly elevates it – I can't imagine this stew without it now! I've also added extra veggies like bell peppers, mushrooms, or even sweet potatoes to bulk it up and add more nutrients. It’s truly a wholesome, satisfying meal that I never get tired of.
