Coconut Miso Stew Recipe 🍋🟩
Would this be perfect for fall? Yes. But it’s also perfect for summer (thanks to the coconut and lime flavor 🥥). This is one of my FAVORITE meals I’ve ever made. The miso makes this dish next level.
Ingredients:
• Rice
• Chicken
• Coconut milk (I used sweetened)
• Lime juice
• Soy sauce
• Kale
• White onion
• White miso paste
• Seasonings (paprika, chili powder, salt, pepper, garlic, red chili flakes)
• (Optional) siracha or chili oil
Directions:
1. Cook white rice.
2. Boil about 2 fistfuls of kale until soft.
3. Season chicken and cook until fully cooked. Shred and set aside.
4. Cook minced onion and garlic until fragrant. Then add a generous amount of coconut milk (I probably used about 2-3 cups). If your coconut milk is unsweetened, add a little bit of white sugar. Stir.
5. Bring coconut milk to a simmer, then lower the heat slightly. It can bubble slightly, but it shouldn’t be boiling. Add a lot of lime juice and a sprinkle of soy sauce. Then add pepper and chili powder.
6. Add a generous amount of miso and mix and mash until it’s incorporated. It’s important to add miso last, as the healthy probiotics in it can die if they are too hot.
7. Add the chicken last, mix well. Let it sit for 2 minutes, then serve over rice and kale. Enjoy with siracha or chili oil!
