There is nothing better than homemade chicken noodle soup when my family is fighting off sickness. My kids don’t like soup too much but when I make this soup they are more inclined to eat it!
Ingredients:
• 1/2 cup finely diced onions
• 1/2 cup finely diced celery
• 1/2 cup finely cubed carrots
• 3 minced garlic cloves
• 2 tablespoons oil
• 1 1/2 cup cubed chicken
• salt to taste
• pepper to taste
• 2 tablespoon chicken bouillon powder
• 3 cups chicken broth
• 1 cup of water
• 1 teaspoon Italian seasoning
• 1 cup fine egg noodles
Directions:
- In a pan over medium heat add in the oil, onions, celery, and carrots. Salute until veggies are soft. Add in the minced garlic and cook for 30 seconds until fragrant.
- Add in cooked chicken and the seasonings ( salt, pepper, chicken bouillon powder) continue to cook until the chicken is just about fully cooked.
- Top the mixture with chicken broth, water and Italian seasoning. Once boiled for 5-7 mins. Add in a handful or 1 cup of fine egg noodles. Continue to boil for an additional 5 mins and serve.
