In the video, the roots and immature shoots cut off during the asparagus harvest, as well as the extra stems of broccoli, are mixed into the compost.
These scraps are generally cleaned up as "garbage."
But for us it's an essential piece of growing soil.
Our commitment to making soil is not to think of compost as "direct fertilizer."
All of these become the food of countless microbes living in the soil.
They take time to eat, decompose, and actively move the scraps, and for the first time, fluffy and rich soil is born 🌱
This "cycle of life" made by two people and invisible microorganisms brings powerful thickness and superb sweetness to the asparagus that sprouts next ✨

農業において、収穫時に出る野菜の端材や茎は一般的には廃棄物として扱われますが、私の経験から言うと、これらは土づくりにおける宝物です。実際、端材を堆肥として再利用することで、土中の微生物が活性化し、ふかふかで肥沃な土壌が形成されることを肌で感じています。 堆肥は単なる肥料ではなく、微生物の「ごはん」として機能します。微生物たちはこれらの有機物をゆっくり時間をかけて分解しながら動き回ることで、土壌の構造を改善し、作物の生育に必要な栄養素を循環させるのです。このプロセスが活発になるほど、土は生き生きとし、アスパラガスやブロッコリーなどの野菜が力強く育ち、甘みや旨みも増します。 私は特に、収穫の際に出る根元や未熟な芽、余分な茎を捨てずに堆肥へ混ぜ込む工程を大切にしています。この取り組みは土の健康を維持するだけでなく、農園全体の持続可能性にも貢献しています。さらに、毎年これらの堆肥を畑に撒くことで、土壌の微生物のバランスが整い、化学肥料に頼らない自然な肥沃化が実現されていると実感しています。 このように「捨てない農業」は、単なる環境保護に留まらず、より良い野菜を育てるための知恵の結晶です。土の中に潜む無数の微生物とパートナーシップを結ぶことで命が循環し、美味しい収穫が毎年楽しめる喜びは格別です。もしこれからも健康な土づくりや持続可能な農業に興味があるなら、こうした堆肥づくりや微生物の役割に目を向けてみることをお勧めします。
