• 1 cup oats
• 2 eggs
• ½ cup cottage cheese
• 1 ripe banana or a pouch of applesauce
• Splash of milk (I used A2)
• 1–2 tbsp maple syrup (or honey if your kids are over 1 yr old)
• ½ tsp baking soda
• Cinnamon (optional)
• 1 tbsp flaxseed (optional but great for extra fiber)
• Frozen mixed berries
Directions:
1. Blend oats into flour and pour into a bowl.
2. Blend eggs, cottage cheese, banana, milk, and maple syrup until smooth.
3. Pour into oat flour. Add baking soda, cinnamon, and flax. Mix well.
4. Pour into greased dish and top with frozen berries.
5. Bake at 350°F for 25–30 min until set.
6. Cool, slice, and serve.
