Chicken Bacon Ranch Mac and Cheese

366 cals and 34 grams of protein!

I love eating high protein low cal foods that look like they should be so many more calories! I’ve been trying out different variations of this Mac and Cheese recipe for a while and I love every new thing I come up with!

For 7 servings you’ll need:

- 1 box of Barilla protein plus penne pasta

- 15 oz shredded chicken breast (could add more or less to adjust macros)

- 300 grams of cottage cheese

- 1 cup low fat shredded cheese

- 80grams of Greek yogurt

- Ranch seasoning packet

- 2 tbs Mac yourself cheese powder

- 80 ml fair life milk

- 6 slices of macro friendly bacon

Follow instructions on box to cook pasta.

For sauce blend Greek yogurt, cottage cheese, Mac yourself powder, ranch seasoning and milk.

Add cooked and shredded chicken, pasta, and sauce into baking dish and mix to get an even coating on pasta.

Evenly spread cup of shredded cheese on top, break up bacon pieces and spread evenly on top.

Heat oven to 350 and let bake until cheese is melted and bacon starts to crisp (20-25 mins).

These meals are freezer friendly so feel free to freeze and save for later! To reheat from frozen heat for about 1.5-2 mins in microwave covered, stir, heat for another 2 minutes.

... Read moreHey everyone! I'm so excited to share more about this incredible Chicken Bacon Ranch Mac & Cheese Casserole. When I first started experimenting with this recipe, my goal was to create something that tasted super indulgent, but secretly packed a protein punch and wouldn't derail my healthy eating goals. And let me tell you, it's been a game-changer for my meal prep routine! You know how sometimes you crave that ultimate comfort food, but then you look at the 'nutrition facts' and sigh? Well, with this recipe, you don't have to! Clocking in at just 366 calories and a whopping 34 grams of protein per serving, it's truly guilt-free deliciousness. The creamy sauce, savory chicken, and crispy bacon bits, especially 'after baking' when it's all bubbly and golden, make for a truly 'yummy' experience every single time. One of the best things about this casserole is how perfect it is for meal prepping. I often make a big batch on Sunday, and it sets me up with delicious, healthy lunches or dinners for the week. To make it super freezer-friendly, I like to portion it out into individual, microwave-safe containers before freezing. That way, you can just grab one from the freezer, pop it in the microwave (covered, for about 3-4 minutes, stirring halfway), and you've got a warm, comforting meal in minutes. It reheats beautifully, staying creamy and flavorful. Now, I've seen some of you asking about making this a 'crockpot chicken bacon ranch mac and cheese.' While this specific recipe is designed for baking to get that amazing crispy cheese topping and bacon, you can absolutely adapt parts of it for your slow cooker! Here’s how I’d approach it: You could cook your shredded chicken in the crockpot with some ranch seasoning and a bit of broth until it's tender and easily shreddable. Then, prepare your creamy sauce separately, cook your pasta according to package directions, and combine everything in a baking dish. Top with cheese and bacon, then bake as instructed. This gives you the best of both worlds – the convenience of a crockpot for the chicken, and the irresistible texture of a baked mac and cheese casserole. If you prefer a completely hands-off approach for a softer, creamier mac and cheese (without the crispy top), you could try combining lightly cooked pasta, cooked chicken, and the sauce ingredients directly in the slow cooker, stirring occasionally, and adding the cheese/bacon during the last hour or so. Just be mindful of the pasta getting too soft – al dente is key! Don't be afraid to get creative with your casserole either! Sometimes I throw in a handful of fresh spinach or some steamed broccoli florets for extra greens. You could also swap out the shredded chicken for rotisserie chicken for an even quicker prep, or use leaner turkey bacon. A pinch of red pepper flakes adds a nice little kick if you like things spicy! Experiment with different cheese blends too – a mix of cheddar and Monterey Jack works wonders. So whether you're looking for a hearty 'chicken bacon ranch mac and cheese casserole' recipe that's healthy, easy to prep, or just a delicious meal to share, this one truly hits all the marks. Give it a try, and let me know how you customize yours!
