Like many of you, I've had my share of chin chin mishaps – sometimes too hard, sometimes not crunchy enough. But after countless tries, I've cracked the code to consistently perfect, crispy chin chin that everyone raves about! Making the dough is the first crucial step. After combining your dry ingredients – all-purpose flour, sugar, baking powder, and a pinch of salt – I like to rub in cold butter until the mixture resembles fine breadcrumbs. This helps create that flaky texture. Then, slowly add your whisked eggs and milk (I sometimes use a splash of evaporated milk for an extra rich flavor, a little secret I picked up!). Be careful not to overwork the dough; just mix until it comes together. Over-mixing can develop too much gluten, leading to tough chin chin instead of that delightful crunch. Once your dough is ready, cover it and let it rest for about 15-20 minutes. This makes it easier to roll out. Now for the fun part: rolling and cutting! This is where the magic happens for achieving that signature crispiness. Divide your dough into manageable portions. On a lightly floured surface, roll each portion as thinly as you can without tearing it – think about the thickness of a credit card, or even thinner if you can manage! The thinner your dough, the crispier your chin chin will be. I use a pizza cutter to make uniform small squares or diamond shapes. This consistency ensures even frying. Frying is perhaps the most critical stage. Heat your vegetable oil in a deep pot over medium heat. To test if the oil is ready, drop a tiny piece of dough in; it should sizzle and float to the top within a few seconds. Don't let your oil get too hot, or the chin chin will brown too quickly on the outside and remain uncooked inside. Fry in small batches to avoid overcrowding the pot, which lowers the oil temperature and can make your chin chin soggy. Stir constantly for even browning.
