I’ve been meaning to make this for so long, but just haven’t. Now that I have, I’m kicking myself for not doing it sooner. It was one of the easiest meals that I’ve made and as a bonus, my two year old ate most of his even though he doesn’t care for soft foods.
I loosely followed a recipe that told me ingredients, but nothing else. Here’s what I did:
• 1 can enchilada sauce
• 1 can refried beans
• 1 lb ground beef
• 1/3 packet TJ taco seasoning
• 2 c shredded cheese
• 1 container of Gordo’s queso
• 6 tortillas
1. Brown ground beef.
2. Add refried beans and taco seasoning and warm. I added some water as needed to get the consistency that I wanted.
3. Add half of the shredded cheese and place mixture evenly into the tortillas. I had some leftover so you may not need it all.
4. Add half of the enchilada sauce to the bottom of the pan.
5. Roll up the tortillas and place inside pan.
6. Pour queso on top and add the remaining shredded cheese and enchilada sauce.
7. Bake on 400° for around 8 minutes or until top is melty.
