The perfect hot day drink 🍹

Today I used what I had but I make these when the weather starts heat up like it has the last few days here in California . I

I will tell you what I usually use and what I used today .

- Rum

- I used vanilla ice-cream because it’s what I had but I have used a coconut based ice-cream before .

- Pineapple Juice

- I used ice coconut and pineapple sparkling water but I have used just coconut sparkling water also . I preferred the coconut and pineapple one.

- Coconut flakes toasted or not toasted on your preference.

Enjoy x

... Read moreOkay, so you loved my Pina Colada Float idea, and honestly, who wouldn't? It's literally sunshine in a glass! I wanted to dive a little deeper and share some extra tips and variations I've tried, especially since we're all looking for those perfect hot day drinks. First off, let's talk 'creamy.' That's key, right? While I used vanilla ice cream this time (hello, Tillamook Vanilla Bean!), a coconut-based ice cream truly elevates the tropical vibe. The vanilla works wonderfully for a classic, sweet creaminess, but if you can find coconut ice cream, it makes it even more decadent and rich. For an extra creamy kick, sometimes I even blend a little extra coconut cream (the thick part from a can of full-fat coconut milk) into my pineapple juice before adding the ice cream and sparkling water. It makes the entire drink feel like a luxurious dessert! And about that sparkling water – the coconut and pineapple sparkling water is a game-changer! It adds fizz without diluting the flavor, and that extra hint of coconut and pineapple just boosts the whole experience. If you can't find it, plain coconut sparkling water is still fantastic. It keeps it light and bubbly, contrasting beautifully with the rich ice cream. Now, for those of you asking about a 'Pina Colada Malibu' twist, absolutely! Swapping your standard rum for Malibu coconut rum is a fantastic way to lean into those sweet, tropical coconut notes even more. It's a bit lower in alcohol content and brings a lovely, smooth sweetness that complements the pineapple and ice cream perfectly. And what about a 'floater'? If you're feeling fancy, a dark rum 'floater' is a classic touch. Just gently pour a shot of dark rum (like Myers's or Goslings) over the back of a spoon onto your finished float. It creates a beautiful layer and adds a deeper, richer rum flavor as you sip. But wait, there's more! I've seen a lot of you curious about a 'Strawberry Colada Float.' And yes, it's just as delicious and beautiful! To make a Strawberry Colada Float, you essentially follow the same concept. Swap out some of the pineapple juice for strawberry puree (either blended fresh strawberries or a good quality strawberry syrup). You can also use strawberry ice cream instead of vanilla or coconut for an even more intense berry flavor. Imagine this: a layer of strawberry puree, then pineapple juice, a scoop of strawberry or vanilla ice cream, and then your choice of rum (Malibu works great here too!) and some sparkling water. Garnish with fresh strawberries and a touch of whipped cream or coconut flakes, and you've got another showstopper for your next gathering! For a 'pineapple juice float' that's kid-friendly or just alcohol-free, simply omit the rum – it's still incredibly refreshing and satisfying. Don't forget those little touches that make all the difference – a sprinkle of toasted coconut flakes (as seen in my pics!), a fresh pineapple wedge, and a fun paper umbrella complete the perfect tropical escape. Enjoy crafting your perfect float!
