Ingredients
1 cup (2 sticks) unsalted butter, softened to room temperature
1 cup light brown sugar, packed
1/2 cup granulated sugar
2 large eggs, at room temperature
2 teaspoons pure vanilla extract
1 to 2 teaspoons royal blue gel food coloring
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon kosher salt
1/2 cup semi-sweet chocolate chips
1/2 cup white chocolate chips
1/2 cup roughly chopped Oreos
1/2 cup roughly chopped mini chocolate chip cookies (such as Chips Ahoy)
12 to 14 whole Oreos (for the stuffed centers)
Instructions
Cream the butter and sugar: Preheat your oven to 350°F and line two large baking sheets with parchment paper. In a large mixing bowl, use a hand mixer or stand mixer on medium speed to cream the softened butter, brown sugar, and granulated sugar together until light and fluffy.
Add the wet ingredients and color: Beat in the eggs one at a time, followed by the vanilla extract. Add the royal blue gel food coloring and mix until the dough reaches a bright, vibrant blue shade.
Incorporate the dry ingredients: Turn the mixer to low speed and gradually add the all-purpose flour, baking soda, baking powder, and kosher salt. Mix just until the dry streaks of flour disappear.
Fold in the mix-ins: Using a sturdy spatula or wooden spoon, gently fold in the semi-sweet chocolate chips, white chocolate chips, chopped Oreos, and chopped mini chocolate chip cookies until they are evenly distributed.
Stuff and shape the cookies: Take a large scoop of cookie dough (about 3 tablespoons) and flatten it slightly in the palm of your hand. Place one whole Oreo in the center of the dough, then fold the edges up and around the Oreo, rolling it into a smooth ball so the cookie is completely encased. Place the stuffed dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
