White chicken chili is a delightful twist on traditional chili, offering a creamy and mildly spiced flavor that stands out from the classic tomato-based versions. This recipe combines protein-rich ground chicken with a medley of beans—including black beans and white kidney beans—which provide not only texture but also added fiber and nutrients. The inclusion of corn adds a subtle sweetness that balances the savoriness of the broth. Using Rotel, a canned mixture of tomatoes and green chilies, along with an extra small can of green chilies, gives the chili a mild but flavorful kick without overwhelming heat. Seasonings such as salt, pepper, garlic powder, onion powder, and chili powder can be adjusted to personal taste, making this recipe versatile for different spice preferences. Cooking the chili in a crockpot on low for 6 hours allows the flavors to meld beautifully while keeping the texture tender. The addition of cream cheese during cooking creates a rich, creamy base that enhances the chili’s comforting qualities. Before serving, topping the dish with sour cream and Monterey Jack shredded cheese adds a luscious finishing touch, offering a cool contrast to the warm, hearty chili. For extra depth, consider garnishing with fresh cilantro or slicing some avocado on top, which complements the chili’s creamy and spicy notes. This white chicken chili is perfect for fall and winter dinners, serving as a filling meal on its own or paired with crusty bread or tortilla chips. Because it’s slow-cooked, it also makes excellent leftovers and can be refrigerated or frozen for convenient future meals. If looking to customize further, you might try swapping ground chicken for shredded rotisserie chicken or turkey, or even adding diced green bell peppers or jalapeños for an added crunch and zesty heat. This recipe is approachable for home cooks and offers a nutritious, flavorful alternative to traditional red chili recipes.
