🐔 Juicy Cast Iron Chicken
A perfectly seared cast iron chicken breast that's golden brown on the outside, juicy on the inside, and finished with a rich garlic herb butter. 💖
Ingredients (Serves 4)
4 boneless, skinless chicken breasts (6–8 oz each)
2 tablespoons olive oil
1 teaspoon kosher salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon Italian seasoning
🧄 Garlic Herb Butter
2 tablespoons butter
3 cloves garlic, minced
1 teaspoon fresh thyme (or ½ teaspoon dried)
Instructions
1️⃣ Prep the chicken: Pat the chicken breasts dry with paper towels. If they're very thick, pound them to an even ¾-inch thickness for even cooking.
2️⃣ Season: Mix together the salt, pepper, garlic powder, onion powder, smoked paprika, and Italian seasoning. Coat both sides of the chicken evenly.
3 ️⃣ Heat the skillet: Place a 12-inch cast iron skillet over medium-high heat for 4–5 minutes. Add the olive oil.
4️⃣ Sear: Once the oil shimmers, add the chicken breasts. Cook undisturbed for 5–6 minutes until a deep golden crust forms.
5️⃣ Flip: Turn the chicken over and reduce the heat to medium. Cook another 5–7 minutes, or until the internal temperature reaches 165°F.
6️⃣ Finish with butter: Add the butter, garlic, parsley, and thyme to the skillet. As the butter melts, spoon it over the chicken continuously for 1–2 minutes.
7️⃣ Rest: Transfer the chicken to a plate and let it rest for 5 minutes before slicing.
