Homemade Strawberry Syrup 🍓
Homemade Strawberry Syrup!
✨ DON’T throw away those strawberry tops! ✨
I started saving all the tops when I cut up strawberries for the kids and froze them.
👩🍳Home Recipe: Strawberry Syrup
Ingredients: 2 C strawberries (or just the tops)
1 C Sugar
1 C Water
Detailed Steps: Add water to medium sized pot and turn burner to medium high heat. Add your sugar and stir til dissolved. Bring to a boil & then add berries. Return to boil for 10 min. Lower heat to simmer and simmer additional 10 min or until the liquid thickens and forms a syrup consistency. Strain the liquid and add to a jar!
Additional tips/notes: get creative! If you have any other berries that you want to simmer with the strawberries, throw those in too! If you have a few seeds in your syrup, no big deal at all! Homemade is just that; something made with love, not perfection! Enjoy in tea, in ice cream or even added to a cocktail!

One of the best things about making your own strawberry syrup at home is the ability to use parts of the fruit that often get discarded, like the strawberry tops. These are packed with flavor and nutrients, making them perfect for syrups or infusions. When I first started saving strawberry tops instead of throwing them away, I noticed how much more sustainable it made my cooking, reducing food waste significantly. Beyond the basic recipe of strawberries, sugar, and water, you can experiment with adding other berries or herbs to customize the flavor. For instance, a few fresh mint leaves or a splash of lemon juice can add bright, refreshing notes. Heating the mixture gently helps to extract the natural sweetness and vibrant color without destroying delicate flavors. Another tip is to watch the consistency as the syrup simmers. It should thicken enough to coat the back of a spoon but not become too viscous. If you prefer a clearer syrup, straining out the seeds and solids is easy, but leaving some in gives it a rustic, homemade charm. I often use homemade strawberry syrup to sweeten iced tea during the summer or drizzle it over vanilla ice cream. It also makes a fantastic base for cocktails like a strawberry mojito or simple syrup for sparkling water. Plus, it keeps well in the fridge for up to two weeks, so you can enjoy that fresh strawberry flavor for a while.
