Okay, so you've seen the ingredients for my small batch strawberry horchata, but trust me, the magic truly happens when you put it all together! As someone who absolutely adores horchata, finding a way to make a vibrant, fresh strawberry version at home was a game-changer. This isn’t just a recipe; it’s an experience, bringing a taste of Mexico right to your kitchen with a delightful fruity twist. First things first, let's talk about the rice. For this small batch of strawberry horchata, you'll need 1 cup of long-grain rice and 2 cinnamon sticks. The key here is the soaking! You want to soak the rice and cinnamon sticks in 2 cups of hot water for at least 5 hours, or even better, overnight. I usually do this before bed, so it’s ready to go in the morning. Soaking allows the rice to soften beautifully, making it much easier to blend into that creamy consistency we're aiming for, and it really lets the cinnamon infuse its warm, spicy notes into the water. Don't skip this step – it makes all the difference! Once your rice and cinnamon have had their spa day, it's time to blend. Carefully pour the soaked rice, cinnamon sticks, and the soaking water into a high-speed blender. Now, add your fresh strawberries – 1.5 cups of ripe, juicy strawberries are perfect for this amount. Blend everything together on high until the mixture is as smooth as possible. You want to break down those rice grains and strawberries thoroughly. Sometimes, I’ll blend for a good 2-3 minutes, pausing to scrape down the sides, just to ensure everything is perfectly pulverized. This is where you really start to see the beautiful pink hue develop! Next comes the straining – arguably the most important step for that silky-smooth horchata texture. Place a fine-mesh sieve over a large pitcher or bowl. If you have cheesecloth, even better! Line your sieve with a few layers of cheesecloth for extra smoothness. Pour the blended mixture through the sieve, using a spoon or spatula to press down on the solids. You want to extract every last drop of that creamy, flavorful liquid. Discard the remaining pulp (or save it for a compost pile!). This step ensures your horchata is free of any grainy bits, giving you that luxurious mouthfeel. Now for the finishing touches! To your strained liquid, add 1/2 can of sweetened condensed milk, 1/2 can of evaporated milk, and 1/2 teaspoon of vanilla extract. Give it a good stir until everything is completely combined. This is your chance to taste and adjust! Do you like it sweeter? Add a little more condensed milk. Prefer it a bit thinner? Splash in some extra water. Remember, horchata is traditionally served very cold, so pop your pitcher into the fridge for at least an hour before serving. When you're ready to enjoy, simply pour your homemade strawberry horchata over plenty of ice. A fresh strawberry slice or a sprinkle of ground cinnamon makes for a beautiful garnish. This small batch recipe is perfect for a few servings, but if you're hosting a party or just can't get enough (like me!), you can easily double or even triple the ingredients to make a larger quantity – you might even end up with over 2 liters of this delightful liquid goodness! It's incredibly refreshing, wonderfully creamy, and has just the right balance of sweet rice and bright strawberry flavor. It’s definitely earned a spot as one of my go-to Mexican-inspired drinks, perfect for a hot day or whenever I'm craving something special. You absolutely have to try it!
