Copycat Crumbl Strawberry Sugar Cookie Recipe

Ingredients

For the Cookie Dough:

• 1 cup (2 sticks) unsalted butter, softened

• 1 cup granulated sugar

• 1 large egg

• 1 ½ teaspoons vanilla extract

• ½ teaspoon almond extract (optional, but recommended)

• 2 ¾ cups all-purpose flour

• 1 teaspoon baking powder

• ½ teaspoon salt

For the Strawberry Frosting:

• ½ cup (1 stick) unsalted butter, softened

• 2 cups powdered sugar

• 2 tablespoons freeze-dried strawberry powder (or 2 tablespoons strawberry jam)

• 1 teaspoon vanilla extract

• 1-2 tablespoons heavy cream or milk (adjust for consistency)

• Pink food coloring (optional, for a more vibrant color)

Instructions

1. Make the Cookies:

1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a large bowl, cream together butter and sugar until light and fluffy (about 2-3 minutes).

3. Add the egg, vanilla extract, and almond extract. Mix until fully combined.

4. In a separate bowl, whisk together the flour, baking powder, and salt.

5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. The dough will be thick.

6. Scoop about ¼ cup of dough per cookie, roll it into a ball, then slightly flatten it on the baking sheet.

7. Bake for 9-11 minutes or until the edges are set but the centers are soft (they will continue baking as they cool).

8. Let the cookies cool completely before frosting.

2. Make the Strawberry Frosting:

1. In a mixing bowl, beat butter until creamy.

2. Add powdered sugar, strawberry powder (or jam), vanilla extract, and heavy cream/milk. Beat until smooth and fluffy.

3. Add pink food coloring if desired. If the frosting is too thick, add a little more milk.

3. Assemble the Cookies:

1. Spread or pipe the strawberry frosting onto completely cooled cookies.

2. Optional: Top with extra freeze-dried strawberry pieces or a sprinkle of sugar for decoration.

3. Let the frosting set for about 10 minutes, then enjoy!
