Crack Seasoning:
• 1 ranch packet
• 2 tbsp lemon pepper
• 2 tbsp powdered sugar
If you want it sweeter (like Bando in Atlanta), just add more powdered sugar.
If you want it more savory, keep it exactly as is.
Only adjust the powdered sugar—everything else is perfect
Chicken & Fish Prep:
• Season marinade however you normally do (or use my video seasonings)
• Add to buttermilk (the marinade) and soak 1–24 hours (longer = more flavor)
• Do the same exact process for fish
Coating:
• Chicken: flour + same seasonings
• Fish: flour + cornstarch + cornmeal + same seasonings
Breading process (both):
Marinade → coating → marinade → coating (2 coats total)
Then fry
Mozzarella Sticks:
• Freeze for 1 hour first
• Beat eggs + add hot honey (optional) + season
• Season flour the same way +orengeo, basil, Italian seasoning, Parmesan
• Season breadcrumbs with orgango, basil, Italian seasoning, Parmesan
Breading:
Egg → flour → breadcrumbs → egg → breadcrumbs
