Fluffy Isobe-age of edamame and hanpen
Just mix and fry

■ Materials
A. Hanpen: 1 sheet (about 120g)
A. Edamame (from the pod): 3-4 tablespoons
A. Potato starch... 1 tablespoon
A. Mayonnaise... 1 tablespoon tablespoon
Frying oil... appropriate amount
■ How to make
① Put the hanpen in a bowl (or plastic bag) and mash it well while tearing it finely by hand.
② Add the boiled or steamed edamame, potato starch, and mayonnaise from Ingredient A and mix well until smooth.
③ Use a spoon or the like to roll it into bite-sized pieces (or drop it in).
④ Put it in oil heated to 170 ℃ and fry it until the surface becomes golden brown and it's done!

Be careful as it will not come together if you put a lot of beans. If the beans stick out, put them inside and roll them up to make it easier to come together.

この枝豆とはんぺんの磯辺揚げは、家で手軽に作れるおつまみやおやつとしてもおすすめです。私も初めて作った際は、はんぺんのふんわりとした食感に枝豆のプチプチしたアクセントが加わり、食べ応えがありながらも軽い味わいに感動しました。 ポイントは、はんぺんを手でしっかり揉み潰し、枝豆やマヨネーズ、片栗粉とよく混ぜること。これにより、揚げたときに中がふんわりと仕上がり、外はカリッときつね色になるので見た目も食欲をそそります。揚げ油も170℃前後の適温がベストで、温度が低すぎると油を吸ってしまいベタつくので注意が必要です。 私はツナ缶を少し加えてアレンジしましたが、ツナのうま味と枝豆の甘みが絶妙で、家族にも好評でした。コーンや細かく切った玉ねぎをプラスするのもおすすめで、野菜のシャキッと感と甘みでさらに味わい深くなります。また、ピザ用チーズを混ぜ込むと濃厚なコクが加わり、とろける触感が楽しめるのでチーズ好きにはたまらない一品になります。 揚げ焼きでも作れるため、油の使用量を抑えたい時や手軽に作りたい時にもぴったり。はんぺんは元々火が通った食材なので、揚げる際は表面が綺麗なきつね色になるまででOK。中まで火を通す必要がなく、時短料理にも適しています。 私の経験から言うと、まとめる時に枝豆が多すぎると生地が崩れやすくなるので、枝豆は分量を守りつつ、もし枝豆が飛び出てしまったら中に押し込むようにすると綺麗に丸まります。調理を楽しみながら、自分好みの具材を試してみてください。これからの季節、夏野菜を使ったヘルシーなおつまみとしても活躍するので、ぜひ作ってみてくださいね。
