basically everything I want in a cookie that still makes me feel good after. And all you need is a handful of pantry staples :)
INGREDIENTS
-1 ½ cups (180g) gluten-free 1:1 flour (like Bob's Red Mill or King Arthur)
-½ tsp baking soda
-½ tsp salt
-½ cup (120g) coconut oil or vegan butter, softened not melted
-½ cup (100g) coconut sugar
-¼ cup (60ml) maple syrup
-1 tsp vanilla extract
-¾ cup (130g) dairy free chocolate chips or chunks
HOW TO MAKE
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a bowl, whisk together the gluten free flour, baking soda, and salt.
3. In another bowl, beat the softened coconut oil or vegan butter with the coconut sugar and maple syrup until smooth.
Stir in the vanilla.
4. Add the dry ingredients to the wet and mix until a dough forms. Fold in chocolate chips.
5. Chill the dough for 15-30 minutes (this was the cookies won't spread out too much and stay thicker).
6. Scoop dough (about 1.5 tbsp each), place on baking sheet, and bake for 9-11 minutes: edges should be set, centers will still look soft.
7. Let cool for 10 minutes before eating (they firm up as they cool!)
