Chicken Pot Pie Pasta
Ingredients
• 3 boneless, skinless chicken breasts, diced
• ½ yellow onion, diced
• 1 tbsp minced garlic (or 2 cloves)
• ½ cup diced carrot
• ¼ cup diced celery
• 1 cup frozen peas
• 10.5 oz cream of mushroom soup
• ½ cup chicken stock/broth
• ½ cup heavy cream
• 2 tbsp butter
• ½ tsp dried thyme
• ½ tsp garlic powder
• ¼ tsp onion powder
• 12 oz pasta of choice
• Olive oil, salt & pepper to taste
• Garnish: sliced green onions
Instructions
1. Heat olive oil and butter in a pan.
2. Add chicken, season, and sear 4–5 min per side on medium–med-high heat until golden brown delicious (GBD).
3. Push chicken aside. Add carrots (5 min), celery (5 min), onion (5 min).
4. Stir in garlic (2 min).
5. Add peas, stock, cream of mushroom, and cream. Simmer gently.
6. Fold in cooked pasta, stir to coat.
7. Garnish with sliced green onions and serve.
