Girl Brunch
I woke up early in the morning and decided in the early afternoon to create a sandwich full of protein and greens for brunch time. I decided to create this delicious toasted egg sandwich with greens for a delicious meal. toasted whole grain bread topped with jalapeno hummus with spinach and the egg salad with jalapeno slices and some olives on the side. honestly, this was by far tastier then most brunch sandwiches I've created in the past. For the egg salad, it was simply mashed up eggs, lime mayo and mustard with a little bit of pepper. as you can see, I like it a little spicy 😅. #brunch #lunchideas #lemon8challenge #Lemon8 oh, last but not least, I toasted my whole grain toast and a skillet with a little bit of butter
Brunch is often considered the most leisurely and indulgent meal of the day, and preparing a protein-packed sandwich like this one can truly elevate your experience. Using whole grain bread not only adds a satisfying crunch but also provides dietary fiber essential for good digestion and sustained energy. The choice of jalapeno hummus brings both creaminess and a gentle heat, making each bite exciting without overpowering other flavors. Incorporating fresh spinach is a smart way to add vitamins and minerals such as Vitamin K, A, and iron, balancing nutrition with taste. The egg salad is a classic brunch staple, but this version takes it up a notch by mixing mashed eggs with lime mayo and mustard, giving it a tangy kick complemented by a touch of freshly ground pepper. Jalapeno slices add that much-loved spicy twist, perfect for those who enjoy their meals with a little zing. The side of olives complements the sandwich with a salty bite and healthy fats, which can support heart health. Toasting the bread in a skillet with a bit of butter enhances the sandwich’s flavor through caramelization and adds richness without overwhelming the freshness of the greens. This sandwich recipe can be easily customized. For example, swapping jalapeno hummus for a roasted red pepper version provides a milder flavor, and you can vary the greens with arugula or kale for different textures and nutrients. For those keeping an eye on calories, using light mayo and skipping the butter can make this brunch option lighter but still satisfying. Making brunch at home with fresh ingredients like these not only saves money compared to dining out but also allows you to control spice levels and ingredient quality. Preparing a sandwich with protein and greens balances indulgence with health, making your brunch both delicious and nourishing. Whether you are planning a weekend treat or a relaxed midday meal, this spicy egg salad sandwich is a fantastic choice that brings together flavor, nutrition, and ease of preparation.
