✨ You’ll Need:

✔️ 1 whole chicken 🍗

✔️ 4 Tablespoons butter, softened

✔️ 1 lemon

✔️ 2 sprigs fresh rosemary

✔️ Salt & pepper

✔️ 3-4 large carrots, chopped

✔️ 1 onion, chopped

✔️ 1.5 lbs baby red potatoes, halved

✔️ chicken gravy )optional)

👀 How to Make It:

1️⃣ Prep Chicken: Thaw frozen chicken. Preheat oven to 450°F & remove giblets. Pat chicken dry.

2️⃣ Herb Butter: Mix butter, lemon zest, and rosemary. Season chicken with salt & pepper.

3️⃣ Apply Herb Butter: Loosen skin & spread some butter underneath. Rub the rest over the chicken.

4️⃣ Finish: Stuff chicken with lemon. Add veggies to a baking dish, drizzle with olive oil, and season. Place chicken on top.

5️⃣ Roast: Roast at 450°F for 10-15 min, then reduce to 350°F. Roast for 20 min per lb, until internal temp reaches 165°F.

6️⃣ Rest: Tent with foil & rest for 10 min. Serve with roasted veggies!

If you're looking for even simpler seasoning or want to experiment, here are a few ideas: Garlic & Herb Powerhouse: Crush 4-5 cloves of garlic and mix them with olive oil, dried thyme, oregano, and a pinch of paprika. Rub this all over the chicken, under the skin, and even inside the cavity for an incredibly aromatic and flavorful result. Smoky Paprika Rub: Combine smoked paprika, garlic powder, onion powder, salt, and black pepper. This dry rub creates a beautiful, deep color and a wonderfully smoky flavor crust. Just make sure to pat your chicken very dry before applying for maximum crispiness! Lemon & Rosemary Encore: You can never go wrong with more lemon and rosemary! Try adding extra lemon slices and rosemary sprigs directly into the cavity, or even under the skin, to infuse even more brightness into the meat. Choosing Your Perfect Whole Chicken When I'm at the grocery store, I always look for a whole chicken that feels substantial for its size. A good quality chicken, whether it's organic or free-range, often has better flavor and texture. For this particular recipe, a chicken around 3-4 pounds works perfectly for a family dinner, ensuring it cooks evenly and stays juicy. Don't be afraid to ask your butcher for advice if you have specific questions! Cooking More Than One? Roasting Multiple Chickens Like a Pro! Planning a bigger gathering or want leftovers for meal prep? Roasting two chickens is totally doable! Here’s what I do: Space Them Out: Make sure you have enough space in your roasting pan or use two separate pans. Crowding the oven can lead to uneven cooking and less crispy skin. Airflow is key! Check Independently: Even if they're the same size, always check the internal temperature of both chickens. Use your meat thermometer in the thickest part of the thigh, avoiding the bone, for each one. They might not be ready at the exact same time. Adjust Roasting Time: You might need to add a little extra roasting time (15-30 minutes) when cooking two birds, especially if your oven isn't perfectly calibrated. Keep an eye on them and use that thermometer! The Secret to "Transparently" Knowing Your Chicken is Done (and Juicy!) One of the best ways to ensure your chicken is perfectly cooked, not dry, is to trust your meat thermometer. This is what I mean by "transparently" knowing it's done – no guesswork! Target Temperature: Always aim for an internal temperature of 165°F (74°C) in the thickest part of the thigh, without touching the bone. Resting is Non-Negotiable: Don't skip the resting step! Tenting your chicken with foil for 10-15 minutes allows the juices to redistribute throughout the meat, making it incredibly tender and juicy. If you cut into it too soon, all those delicious juices will just run out. Visual Cues: While the thermometer is king, you can also look for clear juices running out when you poke the thickest part of the thigh. The skin should be golden brown and crispy.
