✨ What You Need:

For the Sauce:

✔️ ¼ cup butter

✔️ ¼ cup flour

✔️ 1½ cups milk

✔️ Salt, pepper, dash of nutmeg

✔️ ¼ tsp Dijon mustard

For the Sandwiches:

✔️ 8 slices white bread

✔️ 5 oz ham (about 8 slices)

✔️ 6 oz Gruyère (or Emmental), grated

✔️ ¼ cup grated Parmesan

✔️ 4 eggs

👩‍🍳 How to Make It:

1️⃣ Make sauce: Melt butter, whisk in flour (3 min). Slowly add milk. Stir until thick. Season with salt, pepper, mustard & nutmeg.

2️⃣ Assemble: Spread béchamel on all bread slices. Layer ham and cheese on 4 slices. Top with remaining bread (béchamel side up). Add more cheese on top.

3️⃣ Bake: 425°F for 5–6 min. Broil 2–4 min until golden.

4️⃣ Fry eggs and place one on each sandwich.

That perfect 'one bite' experience, the kind that makes you say, 'I'll never settle for plain toast again!', really comes down to the quality and choice of your ingredients. I've learned a few things along the way that I'm excited to share to help you nail this French classic every single time. First, let's talk about the bread. While classic white bread is traditional, and it works beautifully, don't be afraid to experiment a little. I once tried it with a slightly thicker-cut brioche, and oh my goodness, it was divine! The brioche added an extra layer of richness and sweetness that complemented the savory fillings perfectly. Just make sure whatever bread you choose is sturdy enough to hold all that deliciousness without getting soggy. Thick-cut challah is another fantastic option if you're feeling adventurous. Next up, the ham. This isn't the place for super lean, deli-sliced turkey breast! You want good quality, thinly sliced ham, something with a bit of flavor. My personal preference is a good quality Black Forest ham or even a thinly sliced, slightly smoky, cured ham. The quality of ham truly makes a difference in the overall savory profile. It's worth spending a little extra here. Now, for the cheese – arguably the most important component after the béchamel! The recipe calls for Gruyère or Emmental, and for good reason. They melt beautifully and have a nutty, slightly sweet flavor that's just irresistible. I always go for Gruyère if I can find it because its distinct flavor really shines through. If you can't find Gruyère, Emmental is a close second. I’ve heard of people using Comté or even a sharp white cheddar, but for that authentic Croque Madame taste, stick to a Swiss-style cheese. And don’t skimp on the Parmesan for the top! That little sprinkle adds a wonderful salty, sharp kick and helps create that golden, bubbly crust. The béchamel sauce, for me, is the soul of the Croque Madame. It might seem intimidating, but it's really quite simple. The key is to melt your butter gently, whisk in the flour until it forms a smooth roux, and then slowly, slowly add your milk, whisking constantly to avoid lumps. I always warm my milk slightly beforehand, as it helps incorporate more smoothly. And please, use fresh nutmeg! It makes an incredible difference compared to pre-ground. That hint of warmth and spice truly elevates the creamy sauce. A little Dijon mustard also cuts through the richness beautifully, so don't skip it! Finally, the egg. It's the crown jewel of the Croque Madame! Getting that perfectly fried egg with a runny yolk is essential for that luxurious, messy bite. I like to fry mine in a little butter over medium-low heat, basting the top with the hot butter if you don't want to flip it, until the whites are set but the yolk is still gloriously liquid. When you slice into it and that yolk oozes over the cheesy sandwich, you'll understand why this dish is so much more satisfying than any plain old toast. Trust me, paying attention to these details makes all the difference for an unforgettable brunch!
