🥥 Coconut Tres Leches Cake (SO Moist!)

This might be the best cake I’ve ever made. Seriously. 🤯

Ultra-soft sponge soaked in a coconut milk trio, topped with fluffy whipped cream and toasted coconut flakes — it’s like a tropical cloud you can eat.☁️💛

🛒 What You’ll Need:

For the Cake:

✔️ 1 cup all-purpose flour

✔️ 1 ½ tsp baking powder

✔️ ¼ tsp kosher salt

✔️ 5 large eggs, separated

✔️ 1 cup sugar (divided)

✔️ ⅓ cup whole milk

✔️ 1 tsp coconut extract

For the Milk Mixture:

✔️ 13 oz canned coconut milk

✔️ 14 oz can sweetened condensed milk

✔️ ¼ cup whole milk

✔️ ½ tsp coconut extract

For the Whipped Topping:

✔️ 1 pint heavy whipping cream

✔️ 3 Tbsp powdered sugar

✔️ ½ tsp vanilla extract

✔️ Toasted flaked coconut

👩‍🍳 How to Make It:

1. Combine dry ingredients.

2. Beat egg yolks with ¾ cup sugar; stir in milk & coconut extract.

3. Mix into dry ingredients.

4. Beat egg whites to stiff peaks; fold into batter.

5. Pour into ungreased pan & bake at 350°F for 25–35 mins. Cool completely.

6. Mix three milks + extract. Poke holes in cake & pour milk mixture on top. Chill several hours.

7. Top with whipped cream & toasted coconut. Done!
