Crab Cakes with Chipotle Sauce!

🛒 Ingredients:
✔️ 1 lb lump crab meat
✔️ ½ cup bell pepper (yellow/red), diced
✔️ 2 large eggs, separated
✔️ 2 tsp Old Bay seasoning
✔️ 2 Tbsp mayonnaise
✔️ 1 clove garlic, minced
✔️ 1 Tbsp fresh cilantro, chopped
✔️ Salt & black pepper, to taste
✔️ ¼ cup cornstarch
✔️ 1 Tbsp olive oil
✔️ Panko bread crumbs
🔥 Chipotle Mayo Sauce:
✔️ 1 cup mayonnaise
✔️ 2 Tbsp chives, chopped
✔️ 2 cloves garlic, minced
✔️ 2 tsp fresh lime juice
✔️ 1 tsp chipotle chili powder
✔️ Salt & black pepper
👩🍳 Instructions:
1. Make chipotle mayo: Mix all sauce ingredients until smooth. Chill until ready to serve.
2. In a bowl, mix crab meat, bell peppers, 1 egg, Old Bay, mayo, garlic, cilantro, salt & pepper. Chill for 1 hour.
3. Form into 3-inch patties. Lightly sprinkle with cornstarch.
4. Dip patties in beaten egg, then coat lightly with panko.
5. Heat oil in a skillet over medium. Cook crab cakes 3–4 mins per side, until golden brown.
6. Serve warm with chipotle mayo on the side.
