🥢🌿 These fresh spring rolls are LIGHT, crisp, and so fun to make!

Loaded with juicy mango, crunchy veggies, herby goodness, and shrimp—then dunked in the easiest sweet chili peanut sauce 🤤

✅ You’ll need:

✅ 1 pkg spring roll rice wrappers

✅ 1 pkg vermicelli rice noodles

✅ 2 mangos, peeled + sliced into thin strips

✅ 1 large carrot, shredded or thin strips

✅ 1 large English cucumber, peeled + thinly sliced

✅ 1 lb small cooked shrimp (or chicken)

✅ Fresh mint leaves

✅ Fresh basil leaves

✅ Fresh cilantro

✅ Peanut sauce:

✅ 3/4 cup sweet chili sauce

✅ 1/3 cup peanut butter (smooth or crunchy)

✅ 1/2 tsp low-sodium soy sauce

✅ 1/2 tsp hoisin sauce

👩‍🍳 How to make them:

1. Cook noodles in boiling water for a few minutes (per package). Drain + rinse with cold water.

2. Prep fillings: Slice mango/cucumber, shred carrot, gather herbs + cooked shrimp.

3. Soften wrapper: Add ~1 inch water to a deep dish/pie pan. Dip 1 wrapper for 10–15 seconds (still slightly firm!).

4. Fill: Add 1–2 slices of each veggie + a few shrimp + a few herb leaves + a pinch of noodles to the bottom third of wrapper.

5. Roll: Fold sides in, then roll up tightly like a burrito. Repeat!

1. Blend sweet chili sauce + peanut butter + soy sauce + hoisin until smooth.
