Paella

One-Pot Paella Recipe

Ingredients:

• 2 tbsp olive oil

• 1 small onion, diced

• 3 cloves garlic, minced

• 1 bell pepper, diced

• 1 ½ cups arborio or short-grain rice

• 1 tsp smoked paprika

• ½ tsp saffron threads (optional but authentic!)

• 1 can (14 oz) diced tomatoes, drained

• 3 cups chicken or seafood broth

• ½ lb shrimp, peeled & deveined

• ½ lb chicken thighs, cut into chunks

• ½ cup frozen peas

• ½ lb mussels or clams (optional)

• Salt & pepper to taste

• Lemon wedges & fresh parsley for garnish

Instructions:

1. Sear the Protein: Heat olive oil in a large pot or deep skillet over medium heat. Sear the chicken until golden brown (about 5 minutes). Remove and set aside.

2. Sauté the Veggies: In the same pot, add onion, garlic, and bell pepper. Cook until softened.

3. Toast the Rice: Stir in the rice, smoked paprika, and saffron. Let it toast for 1-2 minutes to absorb flavors.

4. Simmer: Pour in the diced tomatoes and broth. Bring to a simmer, then return the chicken to the pot. Cover and let cook for 15 minutes.

5. Add Seafood & Peas: Nestle in the shrimp, mussels/clams (if using), and peas. Cover and cook for another 5-7 minutes until seafood is done and rice is tender.

6. Final Touches: Season with salt and pepper, then garnish with fresh parsley and lemon wedges.

Serve & Enjoy!
