1 tbsp lime juice 🍋
3 tbsp coconut aminos 🥥
1 tbsp water
Salt 🧂 (to taste)
Pepper (to taste)
3 cup broccoli cut into slaw or mini florets 🥦
For Assembly 🌯
1 1/2 cups black beans 🫘 coated in 2 tbsp homemade taco seasoning 🌶️
Salt 🧂 (to taste)
Pepper (to taste)
4 tortillas
toppings: 2 sliced baby avocados 🥑, tomatoes, salsa, and hot sauce 🌶️🔥)
Instructions
For the Fish 🐟
1. Heat a pan over medium-high. Add cod and season the top side with salt, pepper, and half the taco seasoning. Cook for 3 minutes, then flip.
2. Season the other side in the same way and cook for another 3 minutes.
3. As the fish turns white, break it into flakes with a spatula. Cook until fully opaque.
For the Slaw 🥗
1. In a bowl, mix all liquid ingredients with salt and pepper.
2. Pour the dressing over broccoli slaw and mix well.
For the Assembly 🌯
1. Mix black beans with salt, pepper, and taco seasoning to taste.
2. Warm tortillas in the microwave (15-30 seconds) or in a pan.
