Creamy Rice Pudding with a Hint of Cinnamon and Vanilla

Ingredients:

1 cup long-grain white rice

2 cups water

4 cups whole milk

1/2 cup granulated sugar

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup raisins (optional)

Ground cinnamon (for garnish)

Directions:

Cook the Rice: In a medium saucepan, bring the water to a boil. Add the rice, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the water is absorbed.

Add Milk and Simmer: Stir in the milk, sugar, vanilla extract, ground cinnamon, and salt. Increase the heat to medium and cook, stirring frequently, until the mixture comes to a gentle simmer. Reduce the heat to low and continue to cook, stirring often, for about 30 minutes, or until the pudding has thickened to your desired consistency. If you’re using raisins, stir them in during the last 10 minutes of cooking.

If you want an even richer, chewier pudding, arborio rice (the kind used for risotto) is fantastic – it absorbs liquid beautifully and creates an incredibly thick and white result, just like the picture in this recipe!
