Creamy Rice Pudding

Creamy Rice Pudding with a Hint of Cinnamon and Vanilla

Ingredients:

1 cup long-grain white rice

2 cups water

4 cups whole milk

1/2 cup granulated sugar

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup raisins (optional)

Ground cinnamon (for garnish)

Directions:

Cook the Rice: In a medium saucepan, bring the water to a boil. Add the rice, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the water is absorbed.

Add Milk and Simmer: Stir in the milk, sugar, vanilla extract, ground cinnamon, and salt. Increase the heat to medium and cook, stirring frequently, until the mixture comes to a gentle simmer. Reduce the heat to low and continue to cook, stirring often, for about 30 minutes, or until the pudding has thickened to your desired consistency. If you’re using raisins, stir them in during the last 10 minutes of cooking.

Cool and Serve: Remove the rice pudding from heat and let it cool slightly. Serve warm or chilled, garnished with a sprinkle of ground cinnamon. Enjoy this creamy and comforting Classic Rice Pudding as a dessert or a sweet breakfast treat!

... Read moreHey everyone! I’m so excited to share some of my favorite tips for getting that perfect, lusciously creamy rice pudding every single time. While the recipe here is fantastic, I've spent years experimenting with ingredients, and I've picked up a few tricks to really elevate this comforting classic. Understanding your ingredients is half the battle, and trust me, it makes all the difference in achieving that rich, thick and white pudding we all crave! Let’s talk about the star: the rice! When I first started making rice pudding, I just grabbed whatever rice was in the pantry. But I’ve learned that the type of rice really makes a huge difference in the final texture. For that classic creamy result, long-grain white rice, like Basmati or Jasmine, works wonderfully because it releases just enough starch without getting too mushy. If you want an even richer, chewier pudding, arborio rice (the kind used for risotto) is fantastic – it absorbs liquid beautifully and creates an incredibly thick and white result, just like the picture in this recipe! Some people even use short-grain rice for a denser, stickier pudding, which can be lovely too. Just be aware that cooking times might vary slightly with different types. And let's talk milk! The recipe calls for whole milk, and honestly, that's my secret for the most luxurious, creamy rice pudding. The fat content is absolutely key for that indulgent mouthfeel. But don't worry if you're looking for alternatives. I've tried it with almond milk for a lighter version, and while it's not quite as rich, it's still delicious. Coconut milk adds a lovely tropical twist and extra creaminess if you're dairy-free, but be prepared for a distinct coconut flavor. Skim milk works, too, but you might find the pudding a bit thinner, so sometimes I add a touch of cornstarch slurry at the end to thicken it up to my desired consistency. Sweeteners and flavorings are where you can really personalize your pudding. Granulated sugar is classic, but I sometimes swap a bit of it for brown sugar to add a deeper, caramel note, especially if I'm serving it warm in winter. And vanilla extract and ground cinnamon are absolute non-negotiables for me – they create that comforting aroma and taste that just screams homemade. Sometimes I'll even throw in a whole cinnamon stick while it cooks for a more subtle infusion, then remove it before serving. A tiny pinch of nutmeg or a strip of lemon zest can also elevate the flavors beautifully, especially for a fresher taste. The recipe mentions raisins, which are a traditional favorite. I love plump, juicy golden raisins, but dried cranberries or chopped dried apricots are also fantastic. If you're feeling fancy, a sprinkle of toasted slivered almonds or chopped pistachios adds a lovely crunch and visual appeal. For a truly decadent treat, a swirl of chocolate syrup or a few chocolate chips stirred in at the end can be divine! Just make sure to add any delicate ingredients like fresh berries or chocolate after the pudding has cooled slightly to prevent them from breaking down too much. Oh, and don't skip the salt! It might seem counter-intuitive in a sweet dish, but that quarter teaspoon really balances out the sweetness and brings out all the other flavors. It's a small but mighty ingredient that makes a huge difference in making your creamy rice pudding truly shine. So there you have it – my ingredient deep-dive for the ultimate creamy rice pudding. Don't be afraid to experiment a little and find your own perfect combination. Happy cooking!
