Ingredients:
* 1 1/2 cups warm water
* 2 1/4 tsp yeast
* 1 tsp salt
* 1 Tbsp sugar
* 1 Tbsp butter (melted)
* 3 3/4 cup AP Flour
* course salt for sprinkling
Baking Soda Bath:
* 9 cups water
* 1/2 cup baking soda
Steps:
1. Put baking soda bath on stove top to boil ahead of time and preheat oven to 400F
2. Whisk the yeast into warm water. Allow to sit for 1 minute. Whisk in salt, brown sugar, and melted butter. Slowly add flour.
3. Cover work surface with flour, knead dough for 5 mins.
4. Let rest for 10 minutes
5. Separate dough into pieces (approx. 75g per pretzel)
6. Roll out dough and shape.
7. Place pretzels in boiling baking soda bath for 20-30 seconds and then place on baking sheet with parchment paper
8. Sprinkle with salt as desired
9. Bake at 400F for 12-15 mins or until golden brown
