Let me tell you, my absolute go-to is a homemade Colombian breakfast arepa, especially when it's generously stuffed with fluffy scrambled eggs and gooey melted cheese. This isn't just breakfast; it's a little slice of comfort that truly kickstarts my day. I've found that many people search for 'arepas with scrambled eggs and cheese' or 'arepa colombiana desayuno', and I totally get why! It’s a classic combination that’s relatively simple to make at home, and the flavor is just out of this world. Forget your regular toast; once you try this toasted breakfast sandwich, you'll be hooked! Here's how I whip up my favorite version, keeping it super accessible for anyone wanting to try this delicious dish: What You'll Need: For the Arepas (makes about 4-6): 1 cup pre-cooked white cornmeal (Masarepa, not corn flour!) 1 teaspoon salt 1 ½ cups warm water 1 tablespoon oil (vegetable or olive oil) For the Scrambled Egg & Cheese Filling: 3-4 large eggs Splash of milk or cream (optional, for extra fluffiness) Salt and black pepper to taste ½ cup shredded cheese (mozzarella, Monterey Jack, or even cheddar work great for melting) Optional: 2-3 strips of cooked bacon, crumbled (just like the one in my picture!) Don't worry if they're not perfectly round – homemade is best! Cook the Arepas: Heat a griddle or a non-stick pan over medium heat. Add a little oil. Cook the arepas for 5-7 minutes per side, or until they are golden-brown and have a nice crust. You want them cooked through but still soft inside. This is where you get that satisfying pressed texture, similar to a perfect toasted breakfast sandwich.
