Charring these dried chilies, along with fresh chilies, onion, and garlic, before blending, is a crucial step that unlocks layers of flavor you just can't get otherwise. Trust me, it makes all the difference! Then come the spices: cumin, coriander, and authentic Mexican oregano are non-negotiables in my kitchen. They weave through the broth, creating an aromatic symphony that makes your whole house smell amazing as it simmers. And that's the key – patience. Birria isn't a rush job; it needs time. My chuck beef simmers for hours, transforming into fall-apart tender perfection, soaking up all those incredible flavors. Traditionally, birria is served as a comforting, brothy stew, often with a squeeze of lime, a sprinkle of fresh cilantro, and finely diced onion, alongside warm corn tortillas for dipping. But one of my favorite ways to enjoy it, and definitely the most popular right now, is in quesabirria tacos! Imagine dipping those cheese-filled, birria-stuffed tortillas into that rich, flavorful consommé – pure bliss!
