I was one of those people who thought an egg is an egg who cares where it’s been until I tasted the difference, now I can see the difference. And as a self made baker and home cook I need those over priced eggs right? What eggs are you all buying?

Don't worry, it's completely natural and actually a sign of a fresh egg. These twisted, rope-like structures are made of mucin fibers and their job is to anchor the yolk in the center of the egg. The more prominent they are, the fresher your egg. They dissolve when cooked, so there's no need to remove them. When I first started noticing them, I admit I was a bit confused, but now I see them as a little freshness guarantee! Now, about finding which eggs are best for clean eating and cooking versatility. This is where quality really shines through, just like with my Nellie's Free Range eggs! When I talk about 'clean eating,' I'm looking for eggs from hens that are well-cared for, fed a good diet, and aren't pumped full of things I don't want in my food. That's why certifications like 'CERTIFIED HUMANE' and labels proudly stating 'NO ANTIBIOTICS NO ADDED HORMONES' are so important to me. These aren't just buzzwords; they indicate practices that lead to healthier hens and, in turn, higher-quality, more nutritious eggs. There’s a big difference between cage-free, free-range, and pasture-raised. While 'cage-free' means hens aren't in cages, they might still be in crowded barns. 'Free-range,' like my beloved Nellie's, means they have access to the outdoors, which usually leads to better-tasting eggs with brighter yolks. 'Pasture-raised' takes it a step further, meaning hens spend significant time outdoors, foraging on grass and insects, which can further boost their nutritional profile. For baking, these higher-quality eggs often have stronger yolks and whites, contributing to better texture and rise in cakes and pastries. For general cooking, they simply taste better! Finally, let's talk eggs protein per 100g or, more commonly, per egg. A large egg typically weighs around 50-55 grams and contains about 6-7 grams of high-quality protein. So, 100g would give you roughly 12-14 grams of protein. But it's not just protein! Eggs are a powerhouse of nutrition, packed with essential vitamins and minerals like Vitamin D, B12, selenium, and choline – which is fantastic for brain health.
