Broccoli, chicken Alfredo, sweet potato 🤤
This was so simple and so delicious. I ordered a tray of grilled chicken breast and broccoli from Wegmans and also ordered some sweet potatoes. I cut up the chicken and threw it in the air fryer with the broccoli. Then I drizzled it with some Rao’s roasted garlic Alfredo sauce and then I topped with some fresh parmesan. I threw that on a lightly salted and buttered baked sweet potato 🍠 OMG delicious!
If you're looking for a simple yet satisfying dinner, this Broccoli Chicken Alfredo on a baked sweet potato is a fantastic option. I love how the pre-cooked grilled chicken and broccoli from Wegmans saves so much time, especially when paired with an air fryer that crisps everything to perfection in minutes. Using Rao’s roasted garlic Alfredo sauce adds a rich, creamy flavor without overpowering the dish. Adding fresh parmesan on top brings a nice salty tang that complements both the chicken and broccoli. Baked sweet potatoes serve as an excellent base for this meal. They're naturally sweet and provide a great contrast to the savory Alfredo sauce, balancing the flavors well. Lightly salting and buttering the sweet potato enhances its texture and taste, making it even more comforting. This combination feels indulgent but is actually packed with protein and fiber. From personal experience, this dish is perfect for busy weeknights when you want to eat well but don’t have the energy to prepare something complicated. Using prepared meals from stores like Wegmans can be a game changer. Plus, air frying adds a crispy, roasted texture that elevates otherwise simple ingredients. Feel free to customize this meal by adding extra veggies like bell peppers or mushrooms in the air fryer, or swap parmesan for mozzarella if you prefer a milder cheese. I highly recommend trying this recipe as a quick, nutritious dinner that tastes like a treat.
