🐚 Fresh Conch Ceviche Made Right on the Boat

Ingredients

* 1 lb fresh conch, finely diced

* Juice of 6–8 fresh limes (enough to cover the conch)

* ½ white onion, finely diced

* 1 tomato, diced

* ½ cup fresh pineapple, diced

* ½ cup fresh mango, diced

* ¼ cup chopped cilantro

* 1 habanero or jalapeño, finely minced (optional)

* Salt and black pepper, to taste

Instructions

1. Finely dice the fresh conch.

2. Cover with fresh lime juice and let it marinate in the refrigerator for 30–60 minutes until the conch turns opaque.

3. Drain off most of the lime juice, leaving just a little for flavor.

4. Add the white onion, tomato, pineapple, mango, cilantro, and pepper.

5. Season with salt and pepper.

6. Toss gently and serve immediately with tortilla chips or crackers.
